Delight in these easy and flavorful Strawberry Cookies made from a strawberry cake mix, enriched with chocolate chips for a perfect balance of fruity and chocolaty sweetness. Soft, chewy, and quick to prepare, these cookies are ideal for a quick dessert or snack.

Ingredients

Cookie Dough

  • 1 box strawberry cake mix (about 15.25 oz)
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare your baking sheets by greasing them or lining with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix Ingredients: In a large mixing bowl, combine the strawberry cake mix, eggs, and oil. Stir well until the mixture forms a consistent dough. Then fold in the chocolate chips evenly throughout the dough.
  3. Shape Cookies: Using 2 tablespoons of dough for each cookie, roll into balls and place them spaced apart on the prepared baking sheets. Flatten each ball gently using the bottom of a wooden spoon or a drinking glass to shape into cookie rounds.
  4. Bake Cookies: Bake the cookies in the preheated oven for 12 minutes, or until the edges are set and the cookies look slightly golden. Remove from the oven and allow to cool slightly before transferring to a wire rack to cool completely.

Notes

  • Make sure not to overbake to keep the cookies soft and chewy.
  • You can substitute chocolate chips with white chocolate or nuts for a different flavor.
  • Using parchment paper helps with easy cookie removal and easier cleanup.
  • Store cookies in an airtight container at room temperature for up to 5 days.
