Ingredients

Chicken:

  • 1 boneless, skinless chicken breasts

Breading:

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Egg Wash:

  • 1 large eggs
  • 1 tablespoons water

Breadcrumb Mixture:

  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs

Other:

  • 1 cup vegetable oil
  • 1 cup unsalted butter
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped fresh parsley

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Pound Chicken: Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound to 1/2 inch thickness.
  3. Prepare Coating: Mix flour, salt, pepper, garlic powder, and onion powder in a bowl. Whisk eggs and water in another bowl. Combine Parmesan, Italian breadcrumbs, and panko in a third bowl.
  4. Coat Chicken: Coat chicken in flour, then egg, and finally breadcrumb mixture.
  5. Cook Chicken: Fry chicken in oil until golden brown, then bake with mozzarella until melted.
  6. Finish and Serve: Drizzle with butter, sprinkle parsley, and serve hot.

Notes

  • Pounding the chicken ensures it cooks evenly and is tender.
  • Be sure to coat the chicken well in the breadcrumb mixture to get a crispy coating.
  • Use fresh herbs sparingly to avoid overpowering the dish.
