These 5-Squash Patties are a healthy and flavorful way to enjoy a medley of squashes. Crispy on the outside and tender on the inside, they are perfect as a snack, side dish, or light meal.

Ingredients

  • 1 cup zucchini, grated
  • 1 cup yellow squash, grated
  • 1 cup butternut squash, grated
  • 1 cup acorn squash, grated
  • 1 cup pattypan squash, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil, for frying

Instructions

  1. Grate all the squashes and place them in a large bowl. Squeeze out excess moisture using a clean kitchen towel.
  2. Add breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper to the bowl. Mix until well combined.
  3. Form the mixture into 2-3 inch diameter patties.
  4. Heat olive oil in a skillet over medium heat. Cook patties for 3-4 minutes on each side until golden and crispy.
  5. Transfer to a plate lined with paper towels to drain excess oil.
  6. Serve warm with dipping sauce or enjoy plain.

Notes

  • Use a variety of squashes for the best texture and flavor.
  • To bake instead of fry, place patties on a parchment-lined tray, brush with olive oil, and bake at 375°F for 20-25 minutes, flipping halfway.
  • Freeze cooked patties in a single layer before storing in bags for up to 3 months.
