  • 2 tablespoons olive oil

Seasonings:

  • 1 medium onion, chopped

Garnish:

  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken thighs, coconut milk, olive oil, onion, garlic, ginger, chili paste, cumin, paprika, salt, and black pepper. Mix well, cover, and marinate in the refrigerator for at least 1 hour.
  2. Bake the Chicken: Preheat oven to 375°F (190°C). Transfer the marinated chicken to a baking dish. Bake for 35-40 minutes until cooked through (165°F internal temperature).
  3. Finish and Serve: Let the chicken rest for 5 minutes after baking. Squeeze lime juice over the chicken, garnish with cilantro, and serve.
