A Southern Peach Cobbler is a comforting, sweet, and slightly tart dessert with a buttery, golden-brown biscuit topping and juicy, caramelized peaches underneath.

Ingredients

  • 4 cups of fresh or frozen peaches (peeled and sliced)
  • 1 cup of granulated sugar
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1 tablespoon of cornstarch (optional, for thickening)
  • 1 cup of all-purpose flour
  • 1/4 cup of granulated sugar (for the topping)
  • 1 tablespoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of unsalted butter (melted)
  • 1/2 cup of milk
  • 1 teaspoon of vanilla extract
  • 1 egg (beaten)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, toss the peaches with sugar, lemon juice, cinnamon, nutmeg, and cornstarch (if using). Stir until well combined and set aside.
  3. In another bowl, mix together the flour, sugar, baking powder, and salt.
  4. Add the melted butter, milk, vanilla extract, and beaten egg to the dry ingredients. Stir until a thick batter forms.
  5. Pour the peach mixture into the prepared baking dish, spreading it evenly.
  6. Drop spoonfuls of the batter over the peach mixture, covering as much of the fruit as possible.
  7. Bake for 35-40 minutes or until the top is golden brown and the peach filling is bubbling.

Notes

  • For a crunchy topping, sprinkle a little coarse sugar on top of the batter before baking.
  • If you prefer a spiced cobbler, add a pinch of cloves, ginger, or allspice to the peach mixture.
  • Frozen peaches work well in this recipe. Be sure to thaw and drain them to avoid excess liquid in the filling.
  • To make the topping gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
