Ingredients

For the meatballs:

  • 1 pound ground turkey or lean beef
  • 2 large eggs, beaten
  • ¼ cup chopped onion
  • ½ cup Parmesan cheese, shredded
  • 1 ½ cups panko bread crumbs, Italian seasoned
  • 1 teaspoon seasoned salt
  • 1 teaspoon pepper
  • 4 mozzarella cheese sticks, cut into 5 pieces – about 1” each
  • 2432 oz. marinara sauce
  • Shredded mozzarella, optional for topping

For the Zoodles:

  • 2 medium zucchini, sliced
  • 1 teaspoon minced garlic
  • Salt & pepper to taste
  • Olive oil

Instructions

  1. To make the meatballs: In a large bowl, combine ground turkey, beaten eggs, chopped onion, Parmesan cheese, bread crumbs, seasoned salt, and pepper. Mix well and form into meatballs with a piece of mozzarella cheese in the center. Place meatballs in slow cooker with marinara sauce. Cook on low for 6 hours or high for 3 hours.
  2. To make the zoodles: Spiralize zucchini into noodles. Salt and let sit to release moisture. Saute zoodles with garlic, salt, and pepper until tender.
