A comforting and creamy Slow Cooker Chicken Stroganoff recipe that is perfect for busy weeknights. Tender chicken cooked with mushrooms and a rich sour cream sauce, served over egg noodles or rice.

Ingredients

Chicken Stroganoff:

  • 4 boneless, skinless chicken breasts
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup sour cream

For Serving:

  • Cooked egg noodles or rice
  • Optional garnish: chopped parsley

Instructions

  1. Place the chicken breasts in the slow cooker. Add chopped onion, minced garlic, and sliced mushrooms.
  2. In a bowl, mix together the cream of mushroom soup, chicken broth, paprika, salt, and pepper. Pour the mixture over the chicken and vegetables.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the sour cream.
  5. Serve the chicken stroganoff over cooked egg noodles or rice, garnished with chopped parsley if desired.
