Ingredients

For the Lemon Juice Mixture:

  • 1/3 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon Montreal chicken seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves minced garlic

Additional Ingredients:

  • 1.5 pounds boneless skinless chicken breasts, trimmed
  • 1/2 pound fresh green beans, trimmed
  • 1 pound red skin potatoes, cubed
  • 3 Tablespoons salted butter (optional)

Instructions

  1. Prepare the Lemon Juice Mixture: In a medium bowl, combine the lemon juice, olive oil, chicken seasoning, lemon pepper, salt, pepper, onion powder, and minced garlic. Whisk together.
  2. Layer Ingredients in Slow Cooker: Arrange diced potatoes on one side, green beans on the other side, and chicken breasts in the center of the slow cooker.
  3. Drizzle with Butter: Optional: drizzle melted butter over the potatoes and green beans.
  4. Add Lemon Juice Mixture: Pour the lemon juice mixture evenly over the chicken, potatoes, and green beans.
  5. Cook: Cover and cook on HIGH for 3-4 hours or LOW for 4-6 hours without lifting the lid.
