This creamy Slow Cooker Chicken Gnocchi Soup is an Olive Garden copycat recipe that is hearty and comforting. Filled with tender shredded chicken, pillowy potato gnocchi, and nutritious spinach in a rich, creamy broth, this soup is a perfect one-pot meal for any day of the week.

Ingredients

For the Soup:

  • 1 pound boneless skinless chicken breasts
  • 2 cups matchstick carrots
  • 1 cup diced onion
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 3 ½ Tablespoons Italian seasoning
  • 4 cups chicken stock

For Finishing:

  • 1 pound potato gnocchi
  • 2 cups heavy cream
  • 2 cups fresh baby spinach
  • 1 ½ cups shredded Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Add Ingredients: To the bottom of a 6-quart slow cooker, add the chicken, carrots, onion, celery, garlic, Italian seasoning, and chicken stock.
  2. Cook: Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  3. Shred Chicken: 30 minutes before serving, shred the chicken and return it to the slow cooker.
  4. Add Gnocchi and Cream: Add the gnocchi and heavy cream, cover, and cook for an additional 30 minutes.
  5. Finish: Just before serving, stir in the spinach and Parmesan until wilted and melted. Season with salt and pepper, then ladle into bowls to serve.

Notes

  • Store leftovers covered in the fridge for up to 3 days.
  • Kale can be substituted for spinach.
