Ingredients

Ground Beef:

1 pound ground beef (sirloin recommended)

Vegetables:

1 cup matchstick carrots, 1 medium red bell pepper (sliced), 2-3 large scallions (roughly chopped), 3 cloves garlic (minced)

Sauce:

1/2 cup low sodium soy sauce, 2 Tablespoons brown sugar, 14.25 ounces chicken or beef stock

Other:

2 packs ramen noodles, sesame seeds (optional), scallions (optional)

Instructions

  1. Brown Beef: In a skillet over medium heat, brown the ground beef. Drain any grease.
  2. Transfer to Slow Cooker: Place the cooked beef in a slow cooker.
  3. Add Vegetables: Add carrots, red bell pepper, and scallions to the slow cooker.
  4. Prepare Sauce: Whisk together garlic, soy sauce, brown sugar, and stock. Pour over the ingredients in the slow cooker.
  5. Cook: Cover and cook on LOW for 4-6 hours.
  6. Add Noodles: About 30 minutes before serving, add ramen noodles to the slow cooker.
  7. Serve: When noodles are tender, serve hot, optionally topping with sesame seeds and scallions.
