Ingredients

Dry Ingredients:

  • 1 1/4 cups old fashioned oats
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

Wet Ingredients:

  • 1/2 cup melted coconut oil
  • 1/3 cup tahini
  • 1/3 cup real maple syrup
  • 1 large egg
  • 2 teaspoons vanilla extract

Additions:

  • 1 cup dark chocolate chunks, and/or chocolate chips
  • Sea salt for sprinkling

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the dough: In a mixing bowl, combine oats, almond flour, baking soda, salt, coconut oil, tahini, maple syrup, egg, and vanilla. Fold in the chocolate chunks or chips.
  3. Form the cookies: Scoop the dough into rounded tablespoon-sized balls and place them 2 inches apart on the baking sheet.
  4. Bake: Bake for 10-12 minutes until the edges are golden brown but the centers are still slightly soft. Let the cookies cool on the baking sheet and sprinkle with sea salt.
