Ingredients

For The Casserole

  • 3 tablespoons olive oil (divided)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized cubes
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • ¾ cup uncooked long-grain white rice
  • 1 15-ounce can black beans, well-rinsed and drained
  • 1 cup frozen corn kernels, thawed (or canned corn)
  • ¾ teaspoon salt
  • 1 ¼ cups low sodium chicken broth
  • 1 cup tomatillo salsa
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 375˚F.

Heat 2 tablespoons of olive oil in a large oven-safe pan over medium-high heat. Season chicken with garlic powder, paprika, oregano, cumin, salt, and pepper. Cook chicken until browned, then set aside.

  2. Add remaining oil to the skillet. Stir in onions and cook until softened. Add garlic, then rice and cook until lightly toasted. Stir in beans, corn, and salt.
  3. Pour in chicken broth and salsa, bring to a simmer. Stir in 1 cup of cheese until melted. Add chicken back in.
  4. Cover and bake for 45 minutes. Remove cover, sprinkle with remaining cheese, and broil until melted and browned.
  5. Top with garnishes like salsa, cilantro, lime, and avocado. Serve hot.

Notes

  • Kick Up the Heat: Add cayenne, green chilies, or hot sauce for extra spice.
  • Use Chicken Thighs: Substitute boneless chicken thighs for breasts.
  • Veggie Boost: Include sautéed bell peppers, mushrooms, or zucchini for added texture.
  • If using brown rice: Adjust broth quantity and cooking time accordingly.
