Ingredients

  • 2 large chicken breasts or 4 chicken thighs
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon butter (for searing)

For Tortellini in Cheese Sauce:

  • 10 ounces cheese tortellini
  • 1 tablespoon butter (for sauce)
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 8 ounces Velveeta cheese, cubed
  • 1 cup heavy cream or milk
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season Chicken: Pat the chicken dry and season both sides with Cajun seasoning. Let it rest briefly to absorb the spices.
  2. Sear Chicken: Heat a cast iron skillet over medium-high heat and melt 1 tablespoon butter. Sear chicken for 5–7 minutes per side until golden and cooked through. Set aside to rest.
  3. Cook Tortellini: In a separate pot, boil the cheese tortellini according to package instructions. Drain and set aside.
  4. Prepare Cheese Sauce: In a saucepan over medium heat, melt 1 tablespoon butter. Add garlic and sauté until fragrant. Add Velveeta cubes and stir in cream gradually, whisking until smooth and velvety.
  5. Combine Tortellini and Sauce: Mix the drained tortellini into the cheese sauce and stir to coat well.
