2 pounds lean ground beef
½ cup whole milk
2 large eggs
1 packet taco seasoning (¼ cup)
1 cup white onion, finely chopped
4 ounces green chiles, drained
1 cup crushed tortilla chips
2 teaspoons minced garlic
1½ cups grated cheddar jack cheese (divided into 1 cup and ½ cup)
1 cup salsa (divided in half)
Garnish:
Chopped cilantro, for garnish
Instructions
Preheat the oven: Preheat the oven to 400°F. Spray a 9×5-inch loaf pan with nonstick cooking spray and set aside.
Mix the ingredients: In a large bowl, combine ground beef, milk, eggs, taco seasoning, onion, green chiles, crushed tortilla chips, garlic, 1 cup of grated cheese, and ½ cup salsa. Mix well.
Shape and bake: Shape the meat mixture into a loaf and place it in the prepared pan. Top with remaining salsa. Bake for 1 hour 20 minutes. Add remaining cheese on top and bake for 5 more minutes until cheese melts and meatloaf reaches 160°F.
Notes
Do not add extra taco seasoning as it may make the meatloaf too salty.
You can use a 9.5 x 5.5 loaf pan without changing the cook time.
Using gloves to mix the meatloaf with hands helps combine the ingredients without making a mess.
