Ingredients

Ground Beef:

1 pound,

Unsalted Butter:

4 tablespoons (divided into 1 tablespoon and 3 tablespoons),

White Onion:

1 medium (diced),

Carrots:

¾ cup (shredded),

Celery:

¾ cup (diced),

Italian Seasoning:

1 tablespoon,

Oregano:

½ teaspoon,

Salt:

1 teaspoon,

Black Pepper:

½ teaspoon,

Russet Potatoes:

3 large (peeled and cut into bite-size pieces),

Chicken Broth:

3 cups (low sodium),

All-Purpose Flour:

¼ cup,

Sharp Cheddar Cheese:

4 cups (shredded),

Milk:

1½ cups (2%),

Sour Cream:

¼ cup (full fat)

Instructions

  1. Cook Ground Beef: Thoroughly cook the ground beef in a 12-inch frying pan. Drain the fat and set aside.
  2. Sauté Vegetables: In a large pot over medium-high heat with 1 tablespoon of butter, sauté onion, carrots, and celery with Italian seasoning, oregano, salt, and pepper until onions soften.
  3. Add Ingredients: Add beef, potatoes, and chicken broth to the pot. Simmer until potatoes are tender.
  4. Prepare Roux: In a small pan, melt 3 tablespoons of butter and stir in flour until bubbly. Add to soup.
  5. Stir in Cheese: Add shredded cheddar cheese to the soup and stir until melted.
  6. Finish Soup: Pour in milk, simmer, then mix in sour cream. Serve hot.
