Ingredients

Chicken Fajita Skillet:

  • 3 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • ½ yellow onion, diced
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 orange bell pepper, sliced into strips
  • 1 packet fajita seasoning
  • 2 cups Minute rice
  • 2 cups chicken broth
  • 8 ounces tomato sauce

Topping:

  • Gordos cheese dip (use as much as you like)

Instructions

  1. Heat the skillet: Heat olive oil in a large skillet over medium-high. Sauté onions and bell peppers for 2–3 minutes.
  2. Cook chicken: Add diced chicken and fajita seasoning. Cook for 7–8 minutes until chicken is cooked through.
  3. Add rice and liquids: Stir in Minute rice, tomato sauce, and chicken broth. Simmer for 2 minutes.
  4. Finish and serve: Let the skillet sit to absorb the broth. Top with Gordos cheese dip, serve hot, and enjoy!
