These Pizza Cupcakes are a fun and easy twist on traditional pizza, perfect for parties or snacks. Pizza dough is pressed into a muffin tin and filled with gooey mozzarella cheese, zesty pizza sauce, savory toppings, and finished with pepperoni slices. They bake to a golden, crispy perfection and can be customized with your favorite fillings and garnishes.

Ingredients

Pizza Dough

  • 1 (13.8 oz) can Pillsbury pizza crust

Cheese and Sauce

  • 1 ½ cups shredded mozzarella cheese
  • ¾ cups pizza sauce

Fillings and Toppings

  • ¾ cups filling of choice (such as cooked sausage, vegetables, or additional toppings)
  • 12 slices pepperoni
  • Parmesan cheese (for garnish)
  • Red pepper flakes (for garnish)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 400°F (200°C) and spray a standard 12-slot non-stick muffin tin with cooking spray. Set aside.
  2. Cut Dough Circles: Roll out the pizza crust dough on a clean flat surface. Use a 3.5-inch round cookie cutter to cut out 8 circles. Gather the remaining dough pieces, combine them, roll out again, and cut 4 more circles to total 12 dough rounds.
  3. Form Dough Cups: Place each dough circle into the muffin tin slots, pressing the dough gently into the bottom and up the sides to form a cup shape for holding the fillings.
  4. Add Cheese, Sauce, and Fillings: Into each dough cup, place 1 tablespoon of shredded mozzarella cheese, then add 1 tablespoon of pizza sauce, followed by 1 tablespoon of your chosen filling (such as cooked sausage or veggies).
  5. Top with Cheese and Pepperoni: Sprinkle 1 additional tablespoon of mozzarella cheese on top of the filling in each cup, then place a slice of pepperoni on top.
  6. Bake: Place the muffin tin in the preheated oven and bake for 15 to 20 minutes, or until the pizza crust is cooked through and golden brown, and the cheese has melted and is bubbly.
  7. Cool and Garnish: Remove the cupcakes from the oven and allow them to cool in the tin for about 5 minutes before carefully removing. Garnish with grated Parmesan cheese and red pepper flakes if desired, then serve warm and enjoy!

Notes

  • You can customize the filling with any pizza toppings you like including mushrooms, bell peppers, olives, or cooked sausage.
  • Make sure to press the dough evenly into the muffin tin to avoid thin spots that can burn.
  • Let the cupcakes cool slightly before removing from the muffin tin to keep them intact.
  • Use a non-stick spray or lightly grease the muffin tin well to easily release the cupcakes.
  • Leftovers can be stored in an airtight container in the refrigerator and reheated in the oven for best texture.
