Ingredients

  • 2 cups diced fresh pineapple (about 1 small pineapple)
  • 2 cups diced fresh mango (about 3 mangos)
  • 1 cup diced red bell pepper (1 large)
  • 1 cup diced red onion (½ large)
  • 1 finely diced jalapeño (seeds and ribs removed)
  • ⅓ cup chopped fresh cilantro
  • ¼ cup freshly squeezed lime juice (about 3 limes)
  • ¼ teaspoon kosher salt

Instructions

  1. In a large mixing bowl, combine the diced pineapple, mango, red bell pepper, red onion, jalapeño, and chopped cilantro.
  2. Pour the freshly squeezed lime juice over the mixture.
  3. Add the kosher salt and gently toss everything together until well combined.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
