Pineapple Fluff is a light, sweet, and creamy no-bake dessert that combines juicy pineapple, fluffy whipped topping, and crunchy pecans for a delightful tropical treat perfect for family gatherings and potlucks.

Ingredients

Fruit

  • 20 ounces can of crushed pineapple (undrained)
  • 20 ounces can of pineapple chunks (drained)

Dry Ingredients

  • 3.4 ounces box of instant vanilla pudding mix
  • 2 cups mini marshmallows
  • 1 cup chopped pecans
  • 2 cups sweetened coconut flakes

Dairy

  • 8 ounces container of whipped topping (thawed)

Instructions

  1. Mix Pineapple and Pudding: In a large mixing bowl, combine the undrained crushed pineapple and the instant vanilla pudding mix. Stir continuously until the pineapple juice and pudding begin to thicken, creating a creamy base.
  2. Add Mix-ins: Gently fold in the drained pineapple chunks, mini marshmallows, chopped pecans, and sweetened coconut flakes using a spatula to evenly distribute all the ingredients.
  3. Incorporate Whipped Topping: Carefully fold the thawed whipped topping into the mixture until everything is thoroughly combined, maintaining a light and fluffy texture.
  4. Chill the Dessert: Cover the bowl tightly with plastic wrap and refrigerate for 1 hour to allow the flavors to meld and the mixture to set nicely before serving.

Notes

  • Ensure the whipped topping is fully thawed before folding in to achieve a smooth texture.
  • For added flavor, you can toast the coconut flakes lightly before adding.
  • This dessert can be made ahead and refrigerated for up to 24 hours.
  • Substitute pecans with walnuts or almonds if preferred.
  • Serve chilled for best taste and texture.
