Ingredients

Protein and Vegetables

  • 1 lb boneless skinless chicken breast, diced
  • 1 bell pepper, diced

Wet Ingredients

  • 1 tbsp olive oil
  • 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
  • 2 tbsp soy sauce
  • 1 tbsp honey

Dry Seasonings

  • Salt and pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp ground ginger

Other

  • 2 cups cooked white rice

Instructions

  1. Cook the chicken: Heat the olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook, stirring occasionally, until the chicken is browned and cooked through, about 6–8 minutes.
  2. Add the bell peppers: Add the diced bell peppers to the skillet with the chicken and cook for 2–3 minutes until they become slightly tender but still crisp.
  3. Incorporate pineapple: Stir in the drained pineapple chunks and cook for an additional 2 minutes, allowing the flavors to meld.
  4. Mix the sauce: In a small bowl, whisk together the reserved ¼ cup pineapple juice, soy sauce, honey, garlic powder, and ground ginger. Pour this sauce mixture into the skillet and stir well to coat the chicken, peppers, and pineapple evenly.
  5. Simmer the mixture: Let everything simmer uncovered for 4–5 minutes, stirring occasionally, so the sauce thickens slightly and the flavors concentrate.
  6. Serve: Spoon the chicken and pineapple mixture over cooked white rice or serve alongside the rice. Optionally, garnish with green onions or sesame seeds for added texture and flavor.

Notes

  • For extra flavor, garnish with chopped green onions or toasted sesame seeds.
  • You can substitute brown rice for a healthier grain option.
  • Adjust the soy sauce quantity to make it less salty if preferred.
  • This recipe can be doubled easily for larger groups.
  • Leftovers store well in the refrigerator for up to 3 days.
