Bell Pepper and Onion Relish:
4 cups mixed bell peppers, thinly sliced
2 large onions, thinly sliced
Spiced Vinegar Blend:
1 cup white vinegar
1 cup apple cider vinegar
1 cup granulated sugar
1 tablespoon mustard seeds
1 teaspoon celery seeds
1 teaspoon turmeric powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes (optional)
Instructions
Combine Bell Peppers and Onions: In a large bowl, mix the sliced bell peppers and onions.
Prepare Spiced Vinegar Blend: In a medium saucepan, combine white vinegar, apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric powder, salt, black pepper, and red pepper flakes. Bring to a boil, stirring until sugar dissolves.
Combine Ingredients: Pour the hot vinegar mixture over the peppers and onions. Stir well.
Cool and Store: Let the relish cool to room temperature, then transfer to airtight containers. Refrigerate for at least 24 hours before serving.
