Ingredients

Bell Pepper and Onion Relish:

  • 4 cups mixed bell peppers, thinly sliced
  • 2 large onions, thinly sliced

Spiced Vinegar Blend:

  • 1 cup white vinegar
  • 1 cup apple cider vinegar
  • 1 cup granulated sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Combine Bell Peppers and Onions: In a large bowl, mix the sliced bell peppers and onions.
  2. Prepare Spiced Vinegar Blend: In a medium saucepan, combine white vinegar, apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric powder, salt, black pepper, and red pepper flakes. Bring to a boil, stirring until sugar dissolves.
  3. Combine Ingredients: Pour the hot vinegar mixture over the peppers and onions. Stir well.
  4. Cool and Store: Let the relish cool to room temperature, then transfer to airtight containers. Refrigerate for at least 24 hours before serving.
