A quick, chewy, and rich peanut butter cookie that requires no baking, perfect for satisfying sweet cravings with minimal effort.

Ingredients

  • 3 cups quick‑cooking oats
  • ¼ teaspoon salt
  • ½ cup butter
  • 2 cups sugar
  • ½ cup milk
  • 1 cup creamy peanut butter
  • 2 teaspoons vanilla extract

Instructions

  1. Stir the oats and salt together in a large bowl and set it aside.
  2. In a saucepan over medium-high heat, whisk together the butter, sugar, and milk.
  3. Bring the mixture to a full rolling boil and boil for exactly one minute.
  4. Remove from heat and whisk in the peanut butter and vanilla until smooth.
  5. Pour the mixture over the oats and stir until evenly combined.
  6. Drop spoonfuls of the mixture onto a tray lined with wax or parchment paper.
  7. Let the cookies cool completely at room temperature before storing them.

Notes

  • Make sure to boil the sugar mixture for exactly one minute to achieve the right texture.
  • If cookies are sticky, try boiling the mixture a little longer or refrigerating them to firm them up.
  • Natural peanut butter is not recommended as it can make the cookies too greasy.
  • Cookies can be stored in an airtight container for up to 4 days at room temperature, or up to a week in the fridge.
