Ingredients

Salad Ingredients

  • 3 large peaches, pits removed and cut into 6-8 wedges each (or nectarines, ripe)
  • 1 pint cherry tomatoes, halved
  • Half a small shallot, peeled and thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Approx. 10 large fresh basil leaves, chopped
  • Approx. 10 large fresh mint leaves, chopped

Dressing Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • Juice of 1/2 a lemon
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the dressing: In a small bowl or a glass jar with a lid, combine olive oil, red wine vinegar, lemon juice, honey, garlic powder, salt, and pepper. Whisk or shake vigorously until well combined and emulsified. Set aside.
  2. Combine salad ingredients: In a large bowl, add the sliced peaches, halved cherry tomatoes, thinly sliced shallots, crumbled feta cheese, chopped basil, and chopped mint. Gently toss to mix.
  3. Toss with dressing: Pour the prepared dressing over the salad ingredients. Toss gently but thoroughly to ensure everything is evenly coated with the dressing. Adjust seasoning with additional salt and pepper if desired.
  4. Serve or chill: The salad can be served immediately to enjoy the fresh flavors. Alternatively, cover and refrigerate for 30 minutes to let the flavors meld and the salad chill before serving. Enjoy!
