These Parmesan Roasted Cauliflower Bites are a delicious and easy-to-make side dish featuring tender cauliflower florets coated in a crispy Parmesan and breadcrumb crust. Perfect as a vegetarian alternative to chicken nuggets or a flavorful accompaniment to any meal.

Ingredients

Vegetables

  • 7 cups cauliflower florets, cut to bite-sized pieces

Coating

  • 3 to 4 tbsp olive oil
  • 1 cup Italian bread crumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/3 cup Parmesan cheese, grated

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with aluminum foil and spray it liberally with non-stick cooking spray to prevent sticking.
  2. Coat cauliflower with oil: Place the cauliflower florets into a large resealable plastic bag. Add 3 to 4 tablespoons of olive oil, seal the bag, and shake it well until all the florets are evenly coated with oil.
  3. Add breading mixture: Into the same bag, add the Italian bread crumbs, garlic powder, salt, and grated Parmesan cheese. Seal the bag and shake vigorously until each cauliflower floret is thoroughly coated. Press gently inside the bag to help the breading adhere better.
  4. Arrange on baking sheet: Pour the coated cauliflower pieces onto the prepared baking sheet in a single layer. For an extra crisp finish, spray the tops of the cauliflower bites with additional non-stick cooking spray.
  5. Bake the cauliflower: Place the baking sheet in the preheated oven and bake for 10 minutes. After 10 minutes, stir the cauliflower gently to turn the pieces for even browning.
  6. Continue baking: Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cauliflower is golden brown, crispy, and tender when pierced with a fork.
  7. Serve: Remove from the oven and serve the Parmesan roasted cauliflower bites hot as a side dish or a tasty vegetarian snack. Enjoy!

Notes

  • For extra crispy bites, consider broiling for 1-2 minutes at the end but watch carefully to avoid burning.
  • Can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
  • Feel free to substitute gluten-free bread crumbs to make the recipe gluten-free.
  • Adjust salt and garlic powder levels according to taste preference.
  • Adding a sprinkle of fresh parsley or a squeeze of lemon juice before serving adds brightness and flavor.
