This Ground Turkey Zucchini Orzotto is a one-pot risotto-style pasta the whole family will enjoy. Full of flavors like lemon, basil, and garlic, with buttery orzo and zucchini, it’s a delicious and comforting meal.

Ingredients

For the zucchini:

  • 23 tablespoons olive oil
  • 1 1/2 cups chopped zucchini (about 1 medium)
  • kosher salt, to taste
  • 2 large garlic cloves, roughly minced

For the turkey:

  • 1 pound ground turkey
  • fresh ground black pepper, to taste
  • 1 medium yellow onion, diced

For the orzo:

  • 1 pound dry orzo
  • 1/2 cup dry white wine (optional)
  • 34 cups low sodium chicken broth, warmed
  • zest of 1 lemon, plus juice to taste
  • 4 tablespoons unsalted butter
  • 1/2 cup packed basil leaves, roughly chopped
  • grated parmesan, to serve

Instructions

  1. Cook the zucchini: Heat olive oil, cook zucchini with salt until tender, then add garlic.
  2. Cook the turkey: Brown turkey, add onion until golden.
  3. Add the orzo: Cook pasta with oil, add wine if desired.
  4. Cook the orzotto: Gradually add broth until orzo is tender.
  5. Add remaining ingredients: Mix in zucchini, lemon zest, butter, and basil. Season to taste.
  6. Serve & store: Serve with parmesan, basil, and lemon juice. Store leftovers in the fridge.
