Ingredients

Pasta and Liquids

  • 2 cups uncooked macaroni or pasta of your choice
  • 3 cups water (see notes)
  • 3/4 cup heavy whipping cream

Cheese

  • 2.5 cups sharp cheddar cheese, freshly grated
  • 2 cups mozzarella cheese, freshly grated

Spices and Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1.5 tbsp paprika (adjust to taste)
  • 1 tsp mustard
  • 1.5 tsp sugar

Instructions

  1. Prepare Ingredients: Grate the sharp cheddar and mozzarella cheeses fresh. Gather and measure all other ingredients to have them ready before cooking.
  2. Cook Pasta: In a pot, add the uncooked macaroni and pour in 3 cups of water. Place over medium-high heat and bring to a boil. Once boiling, reduce the heat to medium-low.
  3. Simmer Pasta: Cook the pasta according to package instructions until al dente, usually around 8-10 minutes. Keep the heat low so most of the water evaporates, but ensure there’s still a small amount of water left in the pot to prevent burning.
  4. Add Cheese and Seasonings: Lower the heat to low, then add the heavy whipping cream, grated sharp cheddar, mozzarella, salt, pepper, garlic powder, onion powder, paprika, mustard, and sugar. Stir continuously until all the cheese has melted and the mixture is creamy and smooth. Taste and adjust seasoning as desired.
  5. Serve: Serve immediately while hot, enjoying a luscious, creamy mac and cheese straight from the pot.

Notes

  • The water used to cook the pasta should be at least 1-2 cups more than the amount of pasta to ensure even cooking and prevent sticking.
  • Feel free to customize the cheese blend with your favorites for different flavors and textures.
  • Adding sugar balances the flavors and reduces acidity, but it does not make the dish sweet.
  • If the water evaporates completely before the pasta is cooked through, add a small amount of water and continue cooking on low heat.
