One Pot Chili Mac is a delicious and satisfying combination of chili and macaroni and cheese cooked together in one pot. This flavorful dish is hearty, creamy, and just the right amount of spicy.

Ingredients

Main Ingredients:

  • 1 pound ground beef
  • ½ cup yellow onion, diced
  • 2 tsp minced garlic (about 2 cloves)
  • 1 tbsp chili powder

Additional Ingredients:

  • 20 oz (2 10-oz cans) chunky Rotel, undrained
  • 15.5 oz chili beans, undrained
  • 3½ cups water
  • 2 cups elbow macaroni
  • 8 oz (½ 16-oz box) Velveeta
  • 1 cup shredded fiesta blend cheese

Instructions

  1. Cook the Beef: In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until beef is browned and onions are translucent.
  2. Add Seasonings: Stir in the chili powder until combined.
  3. Combine Ingredients: Add Rotel, chili beans, and water. Bring to a boil.
  4. Add Macaroni: Stir in the macaroni, cover, and simmer for 5-6 minutes until macaroni is cooked.
  5. Melt Cheese: Add Velveeta, stirring until melted and well combined.
  6. Finish and Serve: Sprinkle with fiesta blend cheese, garnish with parsley, and serve hot.

Notes

  • You can adjust the spiciness by adding more or less chili powder.
  • Feel free to top with sour cream or additional cheese before serving.
