This One-Pot Cheesy Enchilada Tortellini with Beef is a delicious and comforting dish that combines the flavors of enchiladas with cheesy tortellini and seasoned ground beef.

Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons minced fresh garlic

Other Ingredients:

  • 1 can red enchilada sauce (10 oz)
  • 1 bag cheese tortellini (20 oz, fresh or frozen)
  • 1 1/2 cups shredded cheddar-jack cheese blend
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • 1 can fire-roasted diced tomatoes (14 oz), undrained
  • Fresh chopped cilantro for topping

Instructions

  1. Cook Ground Beef Mixture: In a large deep skillet, heat olive oil over medium-high heat. Add ground beef, cook until browned, then add diced onion and cook until softened.
  2. Season and Simmer: Season beef with spices, add fresh garlic, then pour in beef broth, diced tomatoes, and enchilada sauce. Stir to combine.
  3. Add Tortellini: Add cheese tortellini to the skillet, bring to a simmer, cover, and cook for 7-10 minutes until tender.
  4. Melt Cheese: Uncover, stir in shredded cheese until melted and creamy. Remove from heat, stir in sour cream for extra creaminess.
  5. Serve: Top with fresh cilantro before serving.
