Ingredients

Sauce and Seasonings

  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • Sea salt, to taste
  • Black pepper, to taste

Cheese and Veggies

  • 8 oz fresh mozzarella, torn into pieces
  • 2 cups grape tomatoes, halved
  • 2 tbsp fresh basil, chopped

Main Protein and Oils

  • 2 tbsp vegetable oil
  • 2 lb chicken breasts, boneless and skinless, pounded to even thickness

Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the chicken after initial searing.
  2. Prepare Balsamic Mixture: In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard until well combined.
  3. Combine Cheese and Veggies: In a separate bowl, tear the fresh mozzarella into pieces with your hands. Add the halved grape tomatoes and chopped basil, then season with salt and black pepper. Toss gently to mix all the ingredients.
  4. Heat Skillet and Oil: Place a large, oven-safe skillet over medium-high heat and add the vegetable oil. Allow the oil to heat up until shimmering.
  5. Sear Chicken: Season the chicken breasts generously with sea salt and black pepper. Add them in a single layer to the hot skillet. Cook each side for 2-3 minutes until golden brown but not fully cooked through.
  6. Add Balsamic Sauce: Swirl the balsamic mixture once more to combine, then pour it over the seared chicken in the skillet. Let it come to a gentle simmer, using a spatula to scrape any brown bits from the bottom of the pan for extra flavor.
  7. Top and Bake: Remove the skillet from heat. Evenly spread the mozzarella, tomato, and basil mixture over the chicken. Place the skillet uncovered in the preheated oven and bake for 18-23 minutes until the chicken is fully cooked (internal temperature of 165°F).
  8. Rest and Serve: Allow the chicken to rest in the skillet for 3-5 minutes after baking. This helps the juices redistribute for moist, flavorful meat. Serve warm and enjoy your delicious one pan balsamic chicken!

Notes

  • To ensure even cooking, pound the chicken breasts to an even thickness before cooking.
  • Use an oven-safe skillet to seamlessly move the dish from stovetop to oven.
  • Adjust the sweetness by adding more or less honey to the balsamic mixture according to taste.
  • For a low-carb version, serve with steamed vegetables or a fresh green salad instead of bread or potatoes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
