Ingredients
For the Chicken:
2 medium chicken breasts
½ cup buttermilk
1 tablespoon hot sauce
½ cup all-purpose flour
½ cup cornstarch (or more flour)
1 teaspoon each cayenne, garlic powder, salt, black pepper
For the Dipping Oil:
½ cup frying oil (or melted butter)
1 tablespoon brown sugar
1 tablespoon cayenne powder
½ teaspoon each chili powder, smoked paprika, garlic powder
To Assemble:
4 burger buns, buttered and toasted
coleslaw
mayonnaise
pickles
Instructions
Prep the Chicken: Slice chicken breasts horizontally into 4 thin cutlets. Season with salt & pepper. Mix buttermilk and hot sauce in a bowl. Combine flour, cornstarch, and spices in another bowl.
Bread the Chicken: Dredge chicken in flour, then buttermilk, then flour again. Press to coat both sides.
Fry the Chicken: Heat oil, fry chicken for 3 mins per side until crunchy and cooked through.
Make the Hot Sauce: Mix hot oil with sugar and spices. Baste chicken with the mixture.
Assemble the Sandwiches: Spread mayo on bun, add chicken, coleslaw, pickles. Serve.
Notes
If you have leftovers, store in the fridge for up to 3 days. Reheat in oven or air fryer until warm and crispy.
