Ingredients
Rolled Oats
1/2 cup (50g)
Almond Butter
1 cup (240g)
Honey
2 tbsp (42g)
Vanilla Protein Powder
1/4 cup (30g)
Peppermint Extract
1/4 tsp
Mini Dark Chocolate Chips
1/4 cup (40g)
Unsweetened Almond Milk
1–2 tbsp (15-30ml) (if needed)
Instructions
Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
Add Almond Milk: If the mixture is too dry, add 1 tablespoon of almond milk at a time until desired consistency is reached.
Fold in Chocolate Chips: Gently fold in the mini dark chocolate chips.
Roll into Balls: Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat.
Chill: Place the protein balls on a baking sheet lined with parchment paper. Refrigerate for at least 20 minutes to firm up.
Store: Store in an airtight container in the refrigerator for up to a week. Enjoy!

Ensure to use unsweetened almond milk to maintain the flavor balance.
Feel free to substitute almond butter with any nut or seed butter of your choice.
