Meatloaf Ingredients:

  • 1 pound lean ground beef
  • ½ cup finely diced sweet yellow onion
  • ½ cup panko bread crumbs
  • ½ cup plain bread crumbs
  • 8-ounce can tomato sauce
  • 2 large eggs
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons fresh minced garlic
  • 2 teaspoons dried parsley flakes
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground mustard seed

Glaze:

  • ¼ cup ketchup

Instructions

  1. Preheat the oven: Preheat the oven to 375 degrees Fahrenheit. Lightly spray a 12-cup muffin pan with nonstick spray.
  2. Mix the meatloaf: In a large mixing bowl, combine the ground beef, onion, bread crumbs, tomato sauce, eggs, worcestershire sauce, garlic, parsley, salt, pepper, and mustard seed.
  3. Fill muffin cups: Spoon the meatloaf mixture into each muffin cup, filling them to the top.
