1 lb. Pasta Noodles (elbow or rotini)
7 tbsp. Room Temperature Butter, divided
4 Garlic Cloves, minced
3 tbsp. All Purpose Flour
½ cup Reserved Pasta Water
½ cup Heavy Cream
3.5 cups Half and Half
Cheese Blend:
12 oz. Shredded Medium Cheddar
8 oz. Shredded Colby Jack
8 oz. Shredded Mozzarella
4 oz. Shredded Sharp Cheddar
4 oz. Shredded White Cheddar
¼ cup Whipped Cream Cheese
Seasonings:
½ tsp. Onion Powder
½ tsp. Paprika
½ tsp. Mustard Powder
Salt + Black Pepper, to taste
Instructions
Prep Ingredients: Shred all cheeses, mince garlic, and cut butter into tabs.
Boil Pasta: Preheat oven to 425F. Boil pasta until slightly undercooked, reserve ½ cup pasta water, then toss pasta with 2 tbsp. butter in a casserole dish.
Prepare Sauce: In a skillet, melt 5 tbsp. butter, sauté garlic, whisk in flour, then add reserved pasta water, heavy cream, and half and half. Whisk until thickened.
Melt Cheeses: Over low heat, gradually whisk in remaining grated cheeses. Add cream cheese, onion powder, paprika, and mustard powder.
Combine and Bake: Pour sauce over noodles, top with reserved cheeses, and bake for 10 minutes. Broil for 5 minutes until crispy.
Serve: Allow to cool slightly before enjoying!
