Hearty, cheesy casserole packed with taco flavors, perfect for satisfying Mexican food cravings. Easy to make, great for family dinners.

Ingredients

Chicken Mixture:

  • 1 lb cooked, diced chicken
  • 1 can black beans (14.5 oz), drained and rinsed
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 small white onion, diced
  • 1 red bell pepper, diced
  • ½ packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 lime, juiced
  • 2 tbsp diced green onions

To Serve:

  • Sour cream
  • Avocado slices
  • Jalapeño slices
  • Tortilla chips
  • Salsa

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) for even baking.
  2. Prepare the Vegetables: Strain and rinse beans, dice peppers and onions.
  3. Combine the Chicken Mixture: Mix chicken, sour cream, lime juice, tomatoes, and taco seasoning.
  4. Layer the Casserole: Spread beans, peppers, onions, and chicken mixture in a casserole dish.
  5. Add Cheese and Garnish: Top with cheddar cheese and green onions.
  6. Bake: Bake for 28-30 minutes until golden and bubbly.
  7. Serve: Top with sour cream, avocado, jalapeño, and tortilla chips.
