Marshmallow Peanut Butter Bars are a delightful no-bake treat combining creamy peanut butter, sweet butterscotch chips, and colorful fruity mini marshmallows. Perfect for a quick dessert or snack, these bars offer a rich, chewy texture with a hint of vanilla and a burst of fruity marshmallow flavor.

Ingredients

Ingredients

  • ½ cup unsalted butter
  • 1 cup creamy peanut butter (Peter Pan brand recommended)
  • 11 ounces butterscotch chips (Nestle Toll House brand recommended)
  • 1 teaspoon vanilla extract
  • 10 ounces fruity-flavored mini marshmallows (Jet-Puffed brand recommended)

Instructions

  1. Prepare the Ingredients: Measure out all ingredients carefully and line an 8×8-inch pan with parchment paper or grease it lightly to prevent sticking.
  2. Melt Butter and Peanut Butter: In a large saucepan over low heat, melt the unsalted butter and creamy peanut butter together, stirring frequently to ensure a smooth mixture.
  3. Add Butterscotch Chips: Once the butter and peanut butter have combined smoothly, add the butterscotch chips and continue stirring on low heat until the chips are fully melted and the mixture is glossy.
  4. Stir in Vanilla Extract: Remove the saucepan from heat and mix in the teaspoon of vanilla extract thoroughly for added flavor.
  5. Add Mini Marshmallows: Immediately fold in the fruity-flavored mini marshmallows, stirring quickly to combine without melting the marshmallows completely to maintain their texture.
  6. Press into Pan: Transfer the mixture to the prepared pan and press evenly into the bottom using a spatula or wax paper to smooth the surface.
  7. Chill: Place the pan in the refrigerator and chill for at least 1 to 2 hours or until the bars are firm enough to cut.
  8. Slice and Serve: Once set, remove from the refrigerator, lift the bars out by the parchment paper, cut into squares, and serve.

Notes

  • Use a low heat setting when melting to prevent burning the peanut butter and chips.
  • Press the mixture firmly into the pan to avoid crumbly bars.
  • Store bars in an airtight container in the refrigerator for up to a week.
  • Feel free to substitute butterscotch chips with white or milk chocolate chips for a different flavor.
  • Ensure marshmallows are folded in last to keep their fruity flavor and texture intact.
