Ingredients

Chicken Pasta

  • 1 ½ pounds boneless skinless chicken, cut into 1-inch pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil

Sauce

  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • fresh basil for garnish

Instructions

  1. Chicken Pasta – Cook penne pasta according to package instructions. Drain and set aside. Season chicken with salt and pepper. Cook chicken in olive oil until done. Set aside.
  2. Sauce – In the same skillet, melt butter. Sauté garlic, add flour to make a paste. Whisk in broth, cream, and parmesan. Stir in sun-dried tomatoes, paprika, Italian seasoning, salt, and pepper. Simmer to thicken. Add chicken and pasta. Garnish with basil and more parmesan.
