Ingredients

Puff Pastry

  • 230 g organic vegan puff pastry

Filling

  • 2 apples, peeled and small diced
  • 1 tbsp organic lemon peel, freshly grated
  • 2 tbsp lemon juice
  • 4 tbsp agave syrup
  • 1 tsp ground turmeric
  • 6-8 tbsp soy or almond cream

Instructions

  1. Preheat the Oven: Preheat your oven to 180 degrees Celsius to prepare for baking the apple-blossom puffs evenly.
  2. Prepare the Puff Pastry: Roll out the vegan puff pastry on a lightly floured surface to an even thickness. Using a flower-shaped cookie cutter, cut out eight flower shapes, carefully draping each into the cups of a muffin pan to maintain their shape and avoid warping. Leave a small hollow space in the center of each flower pastry and ensure some muffin cups remain empty to prevent sticking.
  3. Make the Filling: In a separate bowl, combine the diced apples, freshly grated lemon peel, lemon juice, agave syrup, ground turmeric, and soy or almond cream. Mix well until all ingredients are evenly incorporated.
  4. Fill the Pastry: Spoon the apple filling mixture carefully into the hollow center of each flower-shaped pastry in the muffin pan, filling them generously but without overfilling.
  5. Bake the Puffs: Place the muffin pan with filled pastries into the preheated oven and bake for about 15 minutes or until the puff pastry turns a beautiful golden brown and is cooked through.
  6. Cool and Serve: Remove the muffin pan from the oven and allow the apple-blossom puffs to cool down before carefully removing them from the pan. For an elegant finishing touch, sprinkle the puffs with powdered sugar before serving.
