This light and healthy broccoli pasta is a delightful twist on a classic comfort food. It’s made with whole grain pasta, fresh broccoli, and a simple garlic olive oil sauce, offering a lighter version of a traditional pasta dish.

Ingredients

  • Whole grain penne pasta
  • Fresh broccoli florets
  • Extra virgin olive oil
  • Garlic cloves, minced
  • Crushed red pepper flakes (optional)
  • Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the whole grain penne pasta and cook according to the package instructions until al dente.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Add the broccoli florets to the skillet and sauté for 2-3 minutes until they are bright green and tender-crisp.
  6. Drain the cooked pasta, reserving about 1 cup of pasta water.
  7. Add the drained pasta to the skillet with the broccoli.
  8. Pour in a bit of the reserved pasta water to help create a silky sauce.
  9. Season with salt, pepper, and crushed red pepper flakes (if using).
  10. Toss everything together until well combined.
  11. Serve the pasta in bowls and sprinkle with grated Parmesan cheese.

  • If you prefer a vegan version, substitute Parmesan cheese with nutritional yeast.
  • For a gluten-free option, use gluten-free pasta.
