Ingredients

For the Crust & Topping:

  • 7 tablespoons (99g) unsalted butter, softened
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (85g) old-fashioned oats or quick oats

For the Lemon Filling:

  • 1 can (14 ounces) full-fat sweetened condensed milk
  • 6 tablespoons (90ml) lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Prepare the oven and pan: Preheat the oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. Make the crust and topping: Beat butter, sugar, and vanilla. Add flour, baking powder, salt, and oats. Mix until crumbly. Press slightly more than half into pan.
  3. Form the crust: Press the crumble mixture into the pan to form the crust.
  4. Make the lemon filling: Whisk sweetened condensed milk, lemon juice, and zest until smooth.
  5. Assemble the bars: Pour lemon filling over crust, top with remaining crumble mixture, and bake.
  6. Cool and cut: Let bars cool, then slice into squares.
  7. Storage: Store at room temperature for up to 2 days or refrigerate for up to 1 week. Freeze for up to 3 months.
