Ingredients

  • 1 cup sugar

  • 2 tablespoons lemon juice

  • 1/2 teaspoon vanilla extract
  • 58 drops yellow food coloring (optional)

Coating:

  • 1/4 cup sugar
  • 3/4 cup powdered sugar

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the flour, salt, and baking soda. Set aside.
  2. Prepare Wet Ingredients: In the bowl of a stand mixer, cream together the butter and sugar until fluffy. Add the egg, lemon juice, lemon zest, vanilla extract, and food coloring, mixing well.
  3. Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until fully combined. Chill the dough in the fridge for 2 hours.
  4. Preheat and Prep: Preheat the oven to 350°F and line baking sheets with parchment paper.
  5. Shape and Coat: Scoop out dough, roll into balls, then coat in regular sugar and powdered sugar. Place on baking sheets.
