Ingredients

Crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar

Filling

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • Zest of 1 lemon

Instructions

  1. Prepare the crust: In a mixing bowl, combine the flour, softened butter, and 1/4 cup sugar. Use your fingers or a pastry cutter to mix until the mixture turns crumbly and holds together when pressed. Press this mixture evenly into the bottom of a greased or parchment-lined baking pan.
  2. Bake the crust: Place the crust in a preheated oven at 350°F (175°C) and bake for about 15-18 minutes, or until it turns lightly golden brown. Remove from oven and set aside.
  3. Mix the filling: In a separate bowl, whisk together the eggs, 1 cup sugar, fresh lemon juice, and lemon zest until fully combined and smooth.
  4. Bake the lemon bars: Pour the lemon filling evenly over the baked crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and does not jiggle when gently shaken.
  5. Cool and serve: Remove the lemon bars from the oven and allow them to cool completely on a wire rack. Once cooled, cut into squares or bars and enjoy the tangy-sweet treat.
