8 cups finely chopped cabbage
1/4 cup finely chopped carrot
2 & 1/2 tablespoons very finely minced yellow onion
For the Dressing:
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup whole milk
1/4 cup buttermilk
2 & 1/2 tablespoons lemon juice
1 & 1/2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/8 teaspoon ground pepper
Instructions
Chop the vegetables very fine: Chop cabbage, carrots, and onions finely, almost like the size of rice. Use a sharp knife or a food processor with a shredding attachment, then chop finely with a knife.
Prepare the Dressing: In a large bowl, combine all dressing ingredients. Whisk until smooth.
Combine: Add cabbage, carrots, and onion to the dressing. Mix well until coated.
Refrigerate: Cover and refrigerate overnight. Stir occasionally for best results. Stir again before serving.
Notes
You can use a pre-shredded coleslaw mix if you prefer, but ensure it only contains green cabbage, carrots, and onions.
