Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp key lime zest
  • ¼ cup key lime juice
  • 1 ½ tsp vanilla extract
  • 1 cup buttermilk

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp key lime juice
  • 1 tsp key lime zest
  • 1 tsp vanilla extract

Instructions

  1. Step 1: Bake the Cake Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in key lime zest, juice, and vanilla. Alternately mix in dry ingredients and buttermilk, starting and ending with dry ingredients. Divide batter evenly between the cake pans and bake for 22–25 minutes, until a toothpick comes out clean. Let cakes cool in pans for 10 minutes, then transfer to a wire rack.
