Huli Huli Chicken, also known as Hawaiian BBQ Chicken, is a flavorful dish featuring tender chicken thighs marinated in a sweet and tangy sauce, then grilled to perfection. This recipe captures the essence of Hawaiian cuisine with its delicious blend of flavors.

Ingredients

Chicken:

  • 45 pounds boneless skinless chicken thighs

Sauce:

  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup canned pineapple juice
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon smoked or sweet paprika

Garnish:

  • Pineapple rings (1 pineapple or 1 can of slices, drained)
  • ½ cup sliced green onions

Instructions

  1. Rinse and dry chicken: Rinse chicken thighs and pat dry.
  2. Prepare marinade: In a large bowl or ziploc bag, combine all sauce ingredients except chicken. Mix well.
  3. Marinate chicken: Reserve ½ cup of sauce, then add chicken to the remaining marinade. Ensure chicken is coated well. Marinate in the refrigerator for at least 4 hours or overnight.
  4. Grill chicken: Preheat grill to 400°F. Grill chicken for about 10 minutes per side until internal temperature reaches 165°F.
  5. Grill pineapple: Grill pineapple rings until golden on each side.
  6. Finish and serve: Brush reserved marinade over chicken. Optionally, thicken sauce and brush over chicken before serving.

  • Store leftover chicken in the refrigerator for 1-2 days. Freeze for up to 1 month.
  • Adjust seasonings to taste. Add more sugar for a sweeter flavor.
