Ingredients:

  • ½ cup Red chillies (mild or hot – your choice)
  • ½ cup Water
  • ½ cup White Sugar
  • 1 tsp Fish Sauce
  • ½ cup White Vinegar
  • 2 tbsp Minced Garlic
  • 1 tsp Salt
  • 1 tbsp Cornstarch (mix with 2 tbsp water)

Instructions

  1. If you prefer it mild, remove the seeds from the chillies. Finely chop or pulse in a blender for a smoother texture.
  2. In a saucepan, combine vinegar, water, sugar, fish sauce, garlic, and chillies. Bring to a boil, stirring until the sugar dissolves.
  3. Stir in the cornstarch slurry and simmer for 1–2 more minutes until the sauce thickens. Let it cool completely and store in a clean jar.
