A flavorful and easy-to-make dish combining honey, BBQ sauce, and chicken over rice for a satisfying meal.

Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 cup rice (white or brown)
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup chicken broth (or water)
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a small bowl, combine BBQ sauce and honey. Stir until well mixed.
  2. Heat olive oil in a large pan over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
  3. Add the chicken to the pan and cook for about 5-7 minutes per side, until golden brown and cooked through. Once cooked, remove the chicken and set it aside.
  4. In the same pan, pour in the BBQ honey sauce. Let it simmer for about 1-2 minutes to thicken slightly.
  5. While the sauce simmers, cook the rice according to the package instructions, using chicken broth or water.
  6. Slice the chicken breasts and place them back into the pan with the sauce. Toss to coat the chicken in the sauce.
  7. Serve the BBQ chicken over the cooked rice, garnishing with fresh parsley if desired.

Notes

  • For a smoky kick, add smoked paprika or a few drops of liquid smoke to the BBQ sauce.
  • For a bit of crunch, serve with roasted vegetables like bell peppers, zucchini, or corn.
  • Use brown rice or quinoa for a healthier option.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
