Ingredients

Sauce:

  • 4 ounces (113g) semi-sweet chocolate, chopped
  • 6 Tablespoons (75g) granulated sugar
  • 1/2 cup (120ml) heavy cream (cold or room temperature)
  • 1/4 cup (80g) light corn syrup
  • 3 Tablespoons (18g) unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 2 Tablespoons (28g) unsalted butter, softened
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a medium saucepan set over medium heat, whisk together chocolate, sugar, heavy cream, corn syrup, cocoa powder, and salt until melted. Allow to boil for 3 minutes or until it reaches 220°F (104°C).
  2. Remove from heat and stir in butter and vanilla until combined.
  3. Use immediately or let cool and store in the refrigerator for up to 1 week. Reheat on low heat when ready to use again.
