This Heavenly Lavender Banana Bread is a delightful twist on the classic favorite, infused with subtle floral notes of lavender that brighten the sweet, moist texture of ripe bananas. Perfect for breakfast or an afternoon treat, it combines the comforting flavors of banana bread with a delicate lavender glaze for an elegantly fragrant finish.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, melted and cooled
  • ¾ cup brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 4 medium ripe bananas, mashed

Glaze Ingredients

  • 1 1/4 cups powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lavender extract
  • 2 tablespoons heavy cream
  • 2 1/2 tablespoons milk
  • a drop light pink or purple food coloring
  • culinary lavender flowers (optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (177°C). Lightly spray a 6-cup loaf pan with nonstick spray to prevent sticking.
  2. Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking soda, and salt. This ensures even distribution of the leavening agents and seasoning.
  3. Combine Wet Ingredients: In a large bowl, combine the melted and cooled butter with brown sugar until well mixed. Add the lightly beaten eggs, vanilla extract, and lavender extract, stirring to incorporate fully.
  4. Add Bananas and Incorporate Dry Ingredients: Stir mashed ripe bananas into the wet mixture. Then gently fold the dry ingredients into the wet ingredients just until combined, taking care not to overmix to keep the bread tender.
  5. Bake the Bread: Pour the batter evenly into the prepared loaf pan. Bake in the preheated oven for 55 to 60 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Cool the Bread: Let the bread cool in the pan for 15 minutes. Then carefully invert the loaf onto parchment paper and allow it to cool completely to room temperature.
  7. Prepare the Glaze: In a small bowl, whisk together powdered sugar, vanilla extract, lavender extract, heavy cream, milk, and a drop of light pink or purple food coloring until smooth. Adjust the consistency by adding a little more milk if needed.
  8. Glaze and Garnish: Once the bread is fully cooled, drizzle or spread the lavender glaze over the top. Optionally, sprinkle culinary lavender flowers for a rustic, decorative touch.

Notes

  • Do not overmix the batter; folding until just combined helps maintain a moist and tender bread texture.
  • Ensure the melted butter has cooled before mixing with eggs to prevent cooking the eggs.
  • Use ripe bananas for the best natural sweetness and moisture.
  • The optional lavender flowers add aesthetic appeal but are edible and safe to consume.
  • Adjust glaze consistency by adding milk slowly until desired thickness is reached.
  • This bread can be stored at room temperature in an airtight container for up to 3 days or refrigerated for up to a week.
