Ingredients

Italian Sausage:

1 pound (450 g) Italian sweet sausage, removed from casings

Celery:

1 cup (100 g) diced celery

Onion:

2 cups (300 g) chopped onion

Red Bell Pepper:

2 cups (200 g) red bell pepper, diced (about 1 large pepper)

Garlic:

2 garlic cloves, minced

Red Pepper Flakes:

A pinch red pepper flakes

Tomato Paste:

1/4 cup (60 g) tomato paste

Zucchini:

2 pounds (900 g) zucchini, cut into bite-sized pieces

Fresh Plum Tomatoes:

5 fresh plum tomatoes, diced (about 500 g)

Black Pepper:

1/2 teaspoon freshly ground black pepper

Chicken or Vegetable Broth:

2 quarts (2 liters) low-sodium chicken broth or vegetable broth

Parmesan Cheese:

1 cup (100 g) coarsely grated Parmesan cheese

Parmesan Rind:

1 tablespoon Parmesan rind (optional)

Fresh Basil:

2 tablespoons chopped fresh basil

Thyme Sprig:

1 fresh thyme sprig

Parmesan Cheese for Garnish:

1 tablespoon Parmesan cheese for garnish (optional)

Instructions

  1. Heat Olive Oil and Cook Sausage: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add sausage meat and cook, breaking it up with a spoon, until browned (about 5 minutes).
  2. Sauté Vegetables: Add onion, celery, and bell pepper. Sauté for 4 minutes.
  3. Cook Aromatics: Push mixture to the sides and lower heat to medium. Add garlic, red pepper flakes, and tomato paste to the center. Cook for 2 minutes, stirring occasionally.
  4. Add Remaining Ingredients: Add tomatoes, zucchini, black pepper, broth, Parmesan rind, Parmesan cheese, basil, and thyme. Stir well.
  5. Simmer: Bring to a simmer, cover, and cook until vegetables are tender (10–15 minutes).
  6. Serve: Remove Parmesan rind. Serve hot, topped with fresh basil and extra Parmesan if desired.
