- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup chicken broth
- Fresh parsley for garnish (optional)
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for another 30 seconds.
- Increase heat to medium-high and add ground turkey. Cook, breaking it apart, until browned and cooked through, about 7-8 minutes.
- Season the turkey with oregano, cumin, paprika, salt, and pepper.
- Add sliced zucchini and chicken broth to the skillet. Stir everything together.
- Cover and cook for 5-7 minutes, until zucchini is tender.
- Adjust seasoning with salt and pepper to taste.
- Garnish with fresh parsley if desired and serve immediately.
